Baked Potato Soup
This is really similar to the baked potato soup at Cattle Company. I'm not the hugest fan of green onions in soup, but I learned not to skimp in this recipe. It needs it for the flavor...
4 large baking potatoes (baked and scooped out. you can use the skins for something else)
6 cups milk
3/4 cup flour
3/4 cup butter
2 t salt
2 t pepper
1 t garlic powder
4 green onions
1 cup cheddar cheese
12 strips of bacon
8 oz. sour cream
I suggest prepping everything first as this recipe goes pretty fast. Chop your green onions (3 for soup, 1 for topping later), shred your cheese, fry and chop your bacon. In a HEAVY bottomed pot melt your butter, then add your flour and whisk until it's smooth and bubbling. Slowly whisk in milk. When bubbling, turn to low and add salt, pepper, green onions, garlic, bacon, and cheese. Add the sour cream just before finishing. Top with extra sour cream, cheese, and bacon, or however you like it.
